I got a fifth of Bombay Sapphire for Christmas.

Gin Sour
Gin Smash
Gin Bloody
Gimlet

The list goes on... Gin gets a bad name, but cocktails is where it really shines. That “pine sap” taste everybody bitches about becomes a another very subtle layer of flavor. Google is your friend. The possibilities really are endless. I much prefer to vodka in cocktails.

My wife is similar, but she enjoys a gin and tonic. Gin, tonic, lime, ice. Done.

Fitzgerald is easy and always a hit when I serve it to anyone (even those who say they don’t like gin)

1.5 oz Gin
1 oz simple syrup
3/4 oz lemon juice
two dashes of angostura bitters

Shake it together with some ice, strain over a glass, garnish with a lemon twist

Essentially an adult fancy lemonade

It doesn’t get any more simple than a Gimlet

2 oz gin
2/3 oz Roses Sweetened Lime juice (buy it in a bottle at the store)

This cocktail also has a cool history that’s a fun story to tell when serving

Martini is the first thing that comes to mind.

But it won't work in your case. A negroni will also be too boozey if this is her taste preference.

I assume you have basic bar tools at home such as a shaker, strainer, and jigger/measuring cup (in ounces). If not, a cup and a spoon gets the job done.

A greyhound is delicious and easy - just gin and grapefruit juice. Makes for a fantastic brunch cocktail.

As others have mentioned, a gimlet is super easy and is basically a margarita with gin substituted for tequila.

A southside fizz is essentially a mojito with gin.

Gin and tonic is about as classic as you can get. Throw a lime wedge in there to create some balance.

Bonus points - if you have some champagne or sparkling wine lying around, go for a French 75.

Greyhound!

It's just gin and grapefruit juice. I don't love either of them separately but they work super well together.

You can also salt the rim and then you have a Salty Dog.
