Crawfish bisque w/ boulettes. A lot of work even with frozen crawfish tail and making boulettes, instead of cleaning and stuffing heads.

My MawMaw made the best crawfish bisque, standing tall at 4'10" over her stove in Carrollton as she cooked. She set a high bar and she stuffed the heads. Boulettes were my saving grace.
