Interesting food item tonight. A Keto, ground chicken crust pizza. Was ok - close to really good, and we will get it a lot better in future attempts.

Pot roast cooked with potatoes, carrots and mushrooms. Served over brown rice.

Leftovers will be eaten as debris poboys.

Ground chicken pizza crust
(Makes four 6X8 inch crusts)

Ingredients:

1 pound ground chicken
1/2 cup Parmesan cheese, shredded
1/2 cup Mozzarella cheese, shredded
2 eggs
1/2 teaspoon Black Pepper
1/2 teaspoon Garlic Salt (Lawry’s brand)
1/2 teaspoon dry Basil
1/2 teaspoon Italian Seasoning

Directions:

Mix everything together in a food processor, or by hand.
Portion out into 4 portions and shape into 4 inch by 6 inch rectangles. They will be thin.

Bake at 400 degrees f, on parchment paper, on a sheet pan.
Bake for 15-20 minutes, then remove, cool slightly and dress as a pizza.

Pizza:

For 4 pizzas

Ingredients:

4 Chicken pizza crusts
3-4 Tablespoons Pizza Sauce
6 Tablespoons Mozzarella cheese, shredded
4 Tablespoons Parmesan cheese, shredded
Your toppings:
Green Peppers, Onion, Mushrooms, Pepperoni, Italian Sausage, Anchovies, Shrimp, etc

Directions:

Spread a thin layer of sauce over the chicken crust. If the sauce is thick, take it all the way to the edge.
add ingredients to the sauced crust add cheeses to the top

Bake at 400 degrees f for 5-7 minutes, until cheese melts.


Edited to add Note:

don't short the pizza sauce. I should have used more on mine (Photo above has too little sauce). This crust will take a zippy sauce, too.

Salt to taste (after cooking and tasting)

Friend,

I have tried multiple chicken and cheese based keto pizza crusts. No matter how much I try to enjoy them, each is terrible and disgustingly greasy in its own special way. To honor the approaching holiday, now just four months away, I am eating Santa Grits, a keto cauliflower dish I invented. They are delicious.

Minestrone. Cleared out a bunch of stuff I needed to get rid of. Bunch of turkey stock, a butternut squash I had no prior idea of what to do with, some tomato, mixed greens, carrots, red beans, chickpeas, potatoes, even some okra. Came out pretty good.
