Picked up a chicken pot pie from fresh market, sometimes you just don't want to cook after a full workday. It's about to come out of the oven. Have a ceaser salad to go with it.
Also did the create your own six pack. Enjoying some beer and prime time golf. Hard to beat.

Easy night. Mahi mahi with gingery miso sauce. Steamed asparagus with shaved Romano. Green giant broccoli and riced cauliflower with cheese.
Those frozen bags of fish at Whole Foods are so good for lazy nights when you still don’t want to succumb to junk food. It’s like 5 minutes of cooking.

Sausage and potato skillet.
I’ve done this dish on the stovetop, but this time I did it in the oven.
1 lb smoked sausage (Rabideauxs), cut into rounds
2 large potatoes, diced
1/2 yellow onion, diced
1/2 red bell pepper, diced
4 garlic cloves, diced
Parsley, dried or fresh.
Toss all the veg in olive oil and season with lots of kosher salt and black pepper.
Mix with the sausage and put in baking pan or skillet. Bake at 400 for 40 min (ish). About 30 min in I added a little chicken stock and stirred it all up and returned to oven for a few more minutes.

I made some tonight also. And I topped it with the last bit of leftover chicken stew/fricasse. Turned out even better than expected
