Corn tortillas stuffed with scrambled eggs, charizo, onions, bell peppers, sliced cherry tomatoes, and some pepper jack cheese. Whole grain toast with fig preserves and grits.

According to a picture with the recipe this was supposed to be a brothier stew and served by itself. No problem though, you know we in Louisiana like our rice so I made some and served mine over rice. Came out better than I thought it would. The wife thinks it's similar to a Pasta Fagioli she makes.
