A strip and asparagus. I recently started salting my steaks the night before and I find it makes a big difference. In researching the topic and looking at so many recipes I find it funny that they almost all say take your steak out of the fridge 30 minutes before cooking to let it get to room temperature. After 30 minutes my steaks are still at about 50 degrees. Sorry for the rant.

Welcome into the light! I don’t have a fancy water cooker or vacuum bags so I put mine in the air fryer at 180 until it gets to 130 then put it on a bed of screaming coals or a skillet. The convection dries the outside even more than the overnight salt on the wire rack. Not feasible if cooking for a crowd but it’s perfect for me.

I’ll try to learn to post pictures one day.
