WFDT - 2/16 - another ice day

Made a red sauce with meatballs (tip of the hat to Otis)

Dear Friends,
I write these words tonight as I sit by hearth and heart, where I have been nearly the entire day on this coldest of days I can recall in many years for our fair city. Our day has been filled with psalms, prayer, and hymns. When our voices grew weary I continued my latest thesis, which I thought of today. "Cockroach populations in New Orleans following a hard freeze." It is sure to be revolutionary, and I have every confidence that I will find a publisher for it.
We have yet to turn on our heat, so resolute has this fire glowed. It is amazing what God provides us in the form of dead wood -- that bright orange, as though the Sun's seed, bathing us in light and comfort. Thank you, dear Lord!
It is one of those days when cooking is not the ideal, unless cooking means making a cup or five of hot chocolate. Tonight, I pulled out from the bag of tricks a pair of lovely tamales. Sam's has had these tamales for years, and I have never thought to try them until recently. They come in bags of ten, and have a relatively short -- two to three weeks -- expiration. My delay in purchasing was due to this short window, thinking that I might waste some of the tamales.
These tamales, though, are of such flavor and comfort to the belly that I do no think a single will be lost to the passage of time.
I had some Dona Marie mole verde sauce left over from a previous meal. In truth, this sauce was terrible. It was gritty, oily, and unpleasant. I had no intention of wasting it, so I decided tonight I would try to use as much as possible. It may have been an unconscious slip, or maybe the oily bottle, but gravity grabbed it from my finger tips, causing it to land on the ground. The bottle did not shatter, but it did crack. It was reason enough for me to discard it in our bin. I am grateful for no great mess, as well as for gravity saving my taste buds from this unpleasant and totally unnecessary addition to the delicious tamales from Sam's.
No sooner did I return to the fridge to find a surprise from Mother: Pancho's cheese sauce! I jumped with glee, but realized this was not the same Pancho's of my youth. Still, it made a satisfying topping. Into the microwave both cheese and tamales went. To save paper and money, this time I did not wrap the tamales in moist paper towels. The end result was no different than had I. At $1.15 per tamale (please excuse my maths error last time), it made for a delicious meal!
For drink, I have moved on to Sam's zero calorie cola. I was having digestive problems consuming the DDT, so for now at least, this Coke Zero substitute, which is just 72 cents per two liter, will have to do. I hope this will satisfy those who wish to see more Walmart products in my meals.
We have just one remaining Tastee Christ the King cake, from the Loyola location. We shall feast on it, and remember the great love of God and sacrifice of Christ, as we enter this Lenten season.

It's been 20 years since I've been to Germany but I got a random hankering for currywurst.
Found a recipe online for the ketchup and it turned out pretty good. Grilled some brats I made last month to go with it.

A Chef friend of mine did a Mardi Gras themed oyster. Poached in Pico de Gallo broth then topped with wasabi ginger mignonette. Navy Cove Oysters

Leftover Fresh Market goodies. I thought this salmon lox kit was a bit overpriced when I bought it, but it ended up way more than I realized. This is the third time eating on it and there’s still several large salmon slices left.

Started with a dozen raw
Then I had about 4 lbs of red beans and rice. Took probably 3/4 home and split 20 fried shrimp with a side of cheese grits. Roommate had Mahi Pontchartrain and hushpuppies
