Unique Texas BBQ experience

Got home from another trip to Texas yesterday. Spent Wednesday-Friday doing anything that the guys over at Goldee’s needed. Prepped, washed dishes, swept, ran pits. Got to experience some sausage making for the first time which I was very interested in as I just purchased my first sausage stuffer.

Seeing that crew make everything in-house, and I mean everything was a sight to see. The amount of work they put in, and what really amazes me is the lack of food waste, was spectacular. Friday they ran their service while I manned the pits, longest few hours of my life after not having messed with a fire since I sold my smoker last August. Went back Saturday to eat and they are now in my top 2 of BBQ platters I have ever eaten.

All in all it was a fun trip. Got to stop at Dayne’s Texas Craft BBQ in Lola’s Trailer park, which is a cool environment in itself. Can’t wait to get back over there next month after I pick up the new smoker in Austin.

Reminds me of what Rudy’s used to be before they went corporate. Rudy’s still puts out a decent product, but nothing like they used to from that original store.

Dayne's is in Fort Worth, correct?

I'm moving just north of the city limits next week so I'll get down there and check it out!

I can't wait to get back to TX and eat BBQ whenever I want it. Boston is a BBQ wasteland, to absolutely nobody's surprise.

ETA: apparently Goldee's is in Fort Worth as well! Definitely stopping there, too. I might go for the bread alone. Everything you posted looks amazing.

Awesome pics - solid way to spend a few days. Goldee’s guys are a solid crew. I went to their pop up at Zavala’s a few years back and talked with Dylan for a bit - real cool dude.

What are you picking up next month?

It’s about 20 minutes from downtown Fort Worth, in Kennedale I think it’s called. Still a Fort Worth address, kind of weird to a non-Texan how that works lol. It’s definitely worth the trip. They have the best turkey I’ve ever eaten at any restaurant. I really enjoyed the Frito Pie baked beans at Daynes. His spot looks like a cool

Going get my 250 gallon trailered smoker. Has taken almost a year now with Covid causing some trailer part issues.

I mapped it from my front door and it's just shy of 40 minutes. Not a bad trip at all for good BBQ, for sure going to check it out.

The pork hash was pleasantly surprising. I don’t eat coleslaw but did eat the one at Goldee’s. I thoroughly enjoyed their beans as well, nothing sweet about them which is what I’m accustomed to.

turkey looks good too. I don't think applying a lot of smoke to birds is a good thing

I had a similar experience in Dallas for BBQ. Hard 8 Was awesome. worked us through a line like cattle with giant open pits of meat for you to choose your meal. You could get anything. tell them how much or how many slices. All weighted at the end together. It was fantastic, but expensive. Def do again..



They would even grill you a ribeye if you want on the spot.

The ribs in the Goldees picture look perfect.

Question: what does putting a stick of wood on the smoker grating do? Just aesthetics?
