things to make with 3 day old French bread

Bought one of those large Reising's French breads from Rouse's yesterday and used half, knowing that I wouldn't use all of it before I return home from vacation on Sunday (3/21 - 3/24). That being said, what are some things to make with bread that isn't completely fresh but still in good condition? Currently being stored in the pantry until I return on Sunday.
I thought about possibly doing a French Onion Soup but I wasn't sure if it was better to have fresh bread or slightly tougher bread. The other option would be making some seasoned croutons we can use for salads.

Toast it and make a bruschetta, or garlic bread.

Croutons, French toast, Bread Pudding, let it go completely hard and grind it up for bread crumbs, feed it to the birds if nothing else.

French toast is a possibility. Bread crumbs to use in meatloaf or meatballs is another idea.
