Growing up, we always had this with cottage cheese or shredded cheese, not mayo.
I ordered "fruit salad" as a side dish at the Crystal Grill in Greenwood, MS and I was served the pears/mayo/cheese combo. I tried it because I'm not one to waste food and I've liked it ever since.

sour kraut on mashed potatoes.
My in-laws, coming from near Pennsylvania Dutch territory, served this at Thanksgiving. The sour kraut is heated up, which mellows the pungency. I liked these things separately but the thought of putting them together seemed nasty. Actually, it's pretty good, better with Bavarian style sour kraut.

I grew up eating this. For lunch at school every once in a while we'd be served meatloaf w/ the ketchup glaze, sauerkraut, and mashed potatoes. Still love it. Actually had it a few weeks ago when we stopped at Lambert's Cafe.

Ketchup on white beans.
When I was a kid my dad ate sardines in Hot Sauce on a cracker with a little yellow mustard. I was always to afraid to try it. Now when the wife ain't around I'll eat some.

Ceviche and sushi
I was skeptical about citrus juice cooking the fish -- and eating "bait" in general. I like both now, and aquachile too.

I’m like, mayo on rice? That sounds nasty.
Plenty of sushi rolls have mayo based fillings with various crab salads and the like

They were supposed to clean that part out.

I had the intestine in XO sauce at Little Chinatown in Kenner about 5-7 years back and enjoyed it. You could definitely taste the gaminess, though

Woof. Some of my friends from the Texas border challenged me to try menudo (made with beef tripe) at their favorite Mexican restaurant. Most of them participate in an annual menudo cooking contest. So I agreed because...when in Rome.
When it was served I noticed I was the only one being served that dish. I sipped it and had a very familiar taste that few expect to be served in a bowl.
They asked me what it tastes like. I gave them an honest answer, "It tastes like arse." But after giving it more thought and a few more spoonfulls, it really tasted more like licking a penny. There's a fine line between the two, but I think I picked up on it - and finshed my bowl.

Sushi has been covered, but I eventually tried it in my 30s and have loved it ever since.
But it took me another 10 years to come across Huitlacoche. It looks like this:
Some people call it corn smut. It's a corn disease.
I came across it at a restaurant in Laredo called Border Foundry. The dish was called Huitlacoche Tenderloin, which is two 5oz. tenderloin medallions with huitlacoche and tequila cream sauce over mushroom and roasted corn risotto.
It was surprisingly good. Now I look for huitlacoche whenever I go to a high end Mexican restaurant. I wish I knew where to find it in Houston.

Peanut butter and grape jelly on a hamburger. Disgusted me until I tried it.
Everyone I have talked into it, loves it.

I've had peanut butter on a burger before and it was pretty good. Can't say that I loved it, or have ordered it since, but I was pleasantly surprised.
Menudo wasn't bad either, but I got tired of chewing the tripe. It's rather bland, but the rest of the soup was not.

I accidentally received pho with tripe, tendon, brisket and meatball a few years back, but it was a to go order and I didn't realize it until I got home. Tripe is largely flavorless and has a strange texture, but I guess I'm glad I tried it. Not one of those things that I've ever crave again, though.
