The profound irony of looking down on "American Cheese"

It's not "real cheese." It's "too processed" we're told.

On the former count, even the FDA agrees. The product I have in mind must go by euphemisms like "Kraft Singles."

As far as the latter count goes, though, this claim is absurd. Cheese is by definition processed. You know what unprocessed cheese is? Milk, or maybe yogurt or something. Read up on how cheese was made even in prehistoric times and tell me that isn't "processing" worthy of any Armour stockyard.

I'm not saying the stuff is great, and I don't prefer it in any overall sense to Gruyere, or Roquefort, or Limburger, or Brie... but Kraft Singles and their many imitators are real cheese, I don't care with the FDA or their eurotrash fellow travelers may claim.

I thought the not real cheese thing had something to do with oil in the mix as opposed to just dairy?

That being said American cheese has its place because of the great melting quality.

Kraft singles are made with less than 51% actual cheese, so it is called a cheese food and is not considered real cheese. You like cheese food? Fine. So do I, in certain applications. But at least understand what you’re talking about.

“Real Cheese” is milk products, enzymes and usually salt.
it is unpasteurized and “processed” only in the sense that it is handled/heated.

nothing better on a burger or grilled cheese, but it is cheese food product, not cheese

One of the best crabmeat au gratins you can find is at Bon Ton Cafe in New Orleans.

Their featured cheese in the dish is surprisingly American.

There’s no way anyone can have this dish and still hate on American cheese.

I’ve enjoyed making my own “American” cheese with sodium citrate. Goes great on burgers.

This. I've done it with all kinds of cheeses. My favorite is smoked gouda. Melt it, add the sodium citrate with a small amount of water, pour it into a parchment lined half-sheet pan, then pop it in the fridge. Come back later and cut into slices or circles.

I agree!! When I make it like Bon Ton, I use the Kraft Deluxe. I sub with Kraft Deluxe instead of Velveeta in some of the few dishes I make with Velveeta. Occasionally, I find the Boar’s Head American cheese.

If I had to pick one cheese for the rest of my life, it wouldn't be American/processed cheese, but it has it's place. More places than swiss, I would argue. Here are few places where it's great:

-greasy flat top burger
-grilled cheese & tomato soup
-quick mac & cheese
-rotel dip
-minor league ballpark BBQ nachos with the round tortilla chips

I'm a little ashamed (not really) that I don't discriminate enough in my cheese choices. I like most all of them. Learned on here tonight from Darla that Kraft Singles are only a "cheese product" and not real cheese.
I always knew Velveeta was a big faker, but loved it anyway.
The best tasting Philly cheese-steaks from up north are flavored by Cheese Wiz -- another cheese faker.
We like what we like.
Real natural cheese or not.

It’s considered pasteurized cheese product

But we eat a lot of it

We also like real cheese - not that big of a deal

Grilled cheese made with the Boursin brand cheese is really good

My youngest has eaten enough cheese - I may start her on wine so she can be a sommelier

Very true. I tried making my 1st grilled cheese with cheddar, it just softens a bit. But you need that ooey, gooey for a good grilled cheese. Food is not just about flavor. Texture matters a lot too. Eat some soggy fries and you’ll agree.
