You’re hitting the nail on “no matter what I do that’s what I would get.”
Thanks for the encouragement.

Bud you’re literally going off on me about how I cook for my family. I’m not a Resturant, I’m not out here running a catering business. I’m making what works for us. You are trying to put labels on what is right and wrong strictly based on what you’ve been taught or read. There’s no laws on what a person can or cannot label a dish. As a matter of fact, the thing I’ve always appreciated about cajun cooking is how people step outside the box. Don’t believe me? Then maybe google “Cajun Chicken Fricassee”. You’ll see passed on for generations chicken cooked in a brown gravy. Now am I saying that’s the right way to do it? No! But it’s also not wrong. There is no right or wrong when it comes to cooking. You do what works for you. If you don’t like the way I do things, that’s fine, I’m not here to change the world. Nonetheless, if you still feel the need to come at me, then go ahead. But let’s be honest, are you really telling me something about me, or maybe something more about yourself? I see you decided to pray for yourself in the middle of your rant, Imma do the same. Have a good one.
I'm an a-hole. I admit it. But I'm totally correct about the Chicken Fricassee.
But seriously, don't get worked up over me. You said you don't mind when people speak their minds. I took advantage of that and had a little fun at your expense and went overboard.
But remember, I started off defending you. The OP knocked you for using too much butter and bacon fat. (The Cajun Ninja does chloesterol for Easter Brunch). They misspelled cholesterol

Ignore Langland. He is the resident village idiot.
Keep on keeping on.

So I assume you make similar comments about boudin?

Your parents must be so proud of you.

Not gonna lie, I’d eat the biscuits and bacon. But omg those hash browns look disgusting.
Downvoted for saying the hash browns look disgusting

I'll take your word for it. I stand by my poop comment, but my GI tract is fubar.

Looks really good. Definitely going to try the biscuits thing.
Good music as well.
Maybe he figured out his cooking videos are more enjoyable without his voice?

Watched several of the videos. Certainly not very impressive dishes but it looks like he’s enjoying himself.

Can you post your cooking videos so we can compare?
[e]: The piyah stuff is a bit cringey, granted, but CN certainly knows how to cook.
A very good friend used his chicken & sausage gumbo recipe and it was one of the best gumbos that I've ever had.

Which ones? There are lots of them.

He cooks home style meals. He's not trying to win a Michelin star or a James Beard award. He makes it simple enough that people that have never cooked were able to pull off some tasty food that they grew up on.

He pretty much nails Cajun dishes about as well as possible. Not sure how he can impress you though.

Those biscuits look good to me, but I like fried dough. I might try that in a regular skillet.
Me too. Stick of butter in the cast iron skillet, a can of "butter tastin' biscuits" and I'm set.

I've NEVER seen a white chicken fricassee.
