There is no such thing as too dark.

I like gumbo at Mr. B's. My favorite from a restaurant that I can recall was at Austin's in Metairie. It was a duck and andoulli one that was dark and spicy.

Dick and Jenny's in the early 2000's had the best gumbo in New Orleans IMHO.

The called it their barn yard gumbo and had smoked rabbit, hen in it. It was smokey and delicious.

I know it has changed hands a few times since then, but is Dick and Jenny's still around? I don't hear much about it anymore.

Both of those above look good but I'm with you. Unless you've burnt the roux then no such thing as too dark. There is a such thing as too light though. To me the first rule of making gumbo is not to half-arse your roux.

In restaurants it is, in homes it isn’t.

I know Coop's is better than some of those. The last time I went though, it was a bit too watery. Hadn't had that happen in 25 years of semiannual visits.

Not a bad article. One thing, though, is their statement that in Cajun country, potato salad is used in lieu of rice in the bowl.

I know lots of people who like to add potato salad in their bowl of gumbo, but not sure I know anyone who puts it in place of rice, unless they just don’t feel like waiting on a new pot to cook.

We know, we've see your shite light gumbo since you can't make a proper roux.

Best gumbo I've had in New Orleans was at Brigtsens. Rabbit and andouille gumbo. But I haven't had much gumbo in New Orleans. I don't seek it out while I'm there.

The best gumbo in NOLA wasn't here long. Sac-a-lait, RIP.

I feel sorry for y’all that derived what gumbo should taste like from restaurants. I know you have no idea what rice and gravy should taste like either. Sad, you’re from here too.

Darker roux = more flavor and less thickening power. That isn't "derived from a restaurant" that's derived by facts.
