Bad take. All across the nation and the world, folks are adopting Texas style bbq. Defined as market/butcher style (aka German-American Bbq or Central Texas-style) Served by the pound, at the counter, focus on the meat, not the sauce. Sides seen as less important.

Nobody is opening up KC style BBQ joints.

Sliced beef is out. People want juicy brisket.

This maybe true, but I'd eat the frick out of some Sonny's sliced beef right now.

Interstellar is a few blocks from my old home (now my rental property). It’s pretty decent, but not top 10.

What is the wait like on one of these places?

Heading to Austin Friday-Tuesday, don't mind a little wait, but anything over 30 minutes in line isn't worth any food.

At interstellar before this article? 2 people in front of me in line every time.

Now? 1 hour+.

Can always email La BBQ your order and skip the line to get it to go, but I believe you have to do it 2 weeks in advance.

Well, that doesn't solve my issue of piss poor planning.

Anywhere you recommend I need to hit up this weekend? Open for whatever. Only place that has made the list is a place called "JewBoy Burgers"

Going to Franklin is basically like tailgating for an LSU game

For great non-traditional go to CM smokehouse at the beer garden. I wouldn’t think the lines are any different at La Barbecue now than they have been, they have been well known for years and have an actual brick and mortar now. Franklin is still to go, so you may see if it’s not too late to place your order. If you don’t mind the 45 minute drive south, head to Seguin for Burnt Bean. You can get breakfast or the BBQ is awesome.

Maybe this list will ease the lines at Valentina's- the best IMO

Gonna have to go visit Roegels. They were on the top 50 in 2017 but got dropped out this year.

Anyone been to Interstellar? I stayed a mile from there a month ago and didn't know it existed.

I’ve had the other two Austin locations. Going to need to complete the sweep.

You're one of the most informed BBQ critics on this board. Much respect.

However, when I go to a BBQ joint it's all about the smoked meats. The only two memorable sides I've eaten were the baked beans at Corkscrew and the green beans at The Pit Room.

And the side shows that are becoming more prevalent don't interest me. I go to BBQ joints for the smoked meats.

I wished Vaughn would publish a best in TX based solely on smoked meats.

My take: this refers to all the (I call 'em) sideshows on BBQ joint menus.

It means Texas Monthly can’t keep their agenda even out of BBQ.

I agree the smoked meats should be the star, but the top restaurants are so close I think it has become about the total experience. I can tell you that I have had memorable side experiences at 4 of the top 10. Plus I’ll add in Dayne’s who made the top 50. Franklin’s was great, but it didn’t make the mark on me a place like Dayne’s did with the Frito Pie beans that were something I’ve never had before. Also I think you have to give a place like Goldee’s credit for making everything by hand, even for things like their slaw.

I’ve seen other people comment about the agenda with Texas Monthly, and I know from skimming through their articles on a monthly basis they can certainly have a bias, but where are people seeing it came through on the list?

Just guessing....some pedigreed, established joints are missing, or out ranked, by new establishments with a short existence, and many seem to have diverse ownership.
