Brisket, sausage, rib racks, and maybe some chicken here and there. Brisket and ribs are smoked rub only. A lot of times it's served in butcher's paper. Sauce slathered all over meat is a KC and NC deal.

Maybe stop going to Rudy’s for a to-go chop beef sandwhich.

I know people like to shite on Rudy's as it's a chain and not great TX BBQ, but the one in College Station had fricking awesome breakfast tacos. The sauce was always on the side for brisket or sausage plates.

Seems like all you get in Texas is brisket or whatever slathered in sauce

Idk where the frick you are eating or what happened to your jose vargas profile, but the only reason bbq places carry sauce around here is for the damn yankees

No shite, the only time I ever saw sauced brisket in Texas was at an event catered by Clem Mikeska's in Temple, even then I'm sure the dumbass that did the ordering requested it.

Stopping in to say my wife and I stopped at this place called Pinkerton’s in Houston this past weekend and it was some of the best BBQ I’ve ever had. That brisket was incredible. Only one type of sauce and you get it on the side if you’d like.

Won the beef category at Memphis in May recently. Their pork ribs and sausage are the best in the city.

Agree on ribs

Sausage in the city might be correct, but Tejas is my winner in the county

I don't see what winning competitions has to do with how good their commercial BBQ is. One has nothing to do with the other.

Cattleack is solid. Lockhart is pretty good too.

Most good Texas BBQ joints don't slather anything in sauce. But they provide it if you want to make everything on the plate taste the same.
