Crawfish Red Snapper Wellington
First we do our homemade crawfish boudin/fried rice sort of deal.
Sausage first. Trinity. Then garlic. Add back everything plus fresh made rice.
Scrape the brown bits like crazy and deglaze with a splash of liquid if needed.
Time to fry the crawfish tails.
Time to gently sear the red snapper.
Now to make the crawfish cream sauce.
Begin to assemble. Crawfish boudin/rice thing on the bottom of puff pastry. Seared red snapper on top. Covered and egg washed and baked.
We are done! Assemble. Ladle of cream sauce, top with fried tails. Garnish. Serve with some greens tossed in lemon vinaigrette.

I've seen these threads and peaked in a few. My God, you guys can cook. Awesome looking entries so far. I got 2 LBs of tails sitting in the freezer trying to figure out what to do with them. Got my eye on a few of these recipes in the thread.

Out of town all weekend, but I was able to cook my dish last night. Submitting right at the buzzer.
Crawfish and Chorizo Stuffed Mirlitons
This is a dish I have made a few times in the past, sort of a random mixture, but the crawfish and chorizo pair really well together. First up, I boiled the mirlitons for about an hour so the are soft and edible.
While that was going, I chopped red onion, red bell pepper, and jalapeño. Sautéed that for about 20 mins, then added garlic and went for a few more minutes.
I started reducing some heavy cream, then put the cooked veggies in there. I added salt, lime juice, lime zest, and cilantro. Simmered until it was thickened. This is an extra addition to my usual recipe, but I thought it would elevate this dish for the challenge. Spoiler alert: it was successful.

Now it's time to get the stuffing mixture going. First up, seared the chorizo on both sides then chopped it up. Added crawfish tails. I did not have any crawfish boil invites so I had to purchase. These are not lead-based Chinese crawfish, so we are good.
After that cooked for a few minutes, I added the asadero cheese, green onions, and garlic. Cooked until the cheese melted.
After that was melted, the mirlitons were cool enough to handle. Sliced in half and scooped out the seeds. Then scoop a little bit of the flesh and put in the crawfish mixture with bread crumbs. This helps to thicken it for stuffing.
Covered with cheddar cheese and bread crumbs then placed in oven 350 for 10 minutes. Forgot to get a pre-oven pic.
Plated up with rice and jalapeño cilantro sauce, topped with fresh cilantro and then it's ready to eat.

One of these days I'll find the time to enter one of these, but I wasn't going to touch this one with a ten foot pole.

I had some crawfish tails and pizza crusts in the freezer, so I decided to make use of them and make a crawfish and andouille sausage pizza. Easy.
I thought about doing something different for the sauce, rather than a traditional red sauce, but the more I thought about, the more I thought that a good red sauce was the best option. IMO. I made a pizza sauce using tomato sauce, red wine, garlic, and Italian herbs. I simmered everything for about 30 minutes. Easy.
I sautéed the crawfish tails in garlic, butter, salt, and pepper. Easy.
I topped the pizza with sauce, cheese, oregano, and andouille. Easy.
I slid it onto the preheated pizza stone, and cooked it for about 3 minutes. I added the crawfish tails and cooked for another minute. Easy.
