It’s probably a good rule for fish but there are cheesy shellfish dishes out there that are great.
I think Lumping shellfish and fish together is dumb.

relish in potato salad.
I love pickles, but potatoes and pickles don't mix. It's disgusting. You add relish to things that don't necessarily taste good on their own, like a hot dog, or a shitty hamburger. If you can't make a good potato salad without relish, then don't make potato salad b/c you suck at it. I'd say the same for chicken salad, but i can understand why some people may like the slight pickle flavor with a chicken salad. I don't, but i understand it. I don't understand the pickle flavor in potatoes. it makes no sense to me.

Its the whole salt, fat, acid thing. Assuming it isn't a mustard version, potato salad is loaded with creamy fats. You balance out creamy fat with acid, and flavor the dish with salt. Pickles are brined in salt and packed in vinegar, so it makes sense.
I like vinegar or grainy mustard over relish in potato salad, but I see why people use it.

I put mustard on everythign, but i don't put mustard in potato salad either.
I do put a little vinegar in my mayo mixture with my egg yolk and some olive oil. My potato salad is great, and anyone that has eaten has said it's the best potato salad they've eaten, and to me, putting relish in it would ruin it. The pickle taste, the slight cruch of it, it just throws the whole thing off for me. I hate it. passionately hate it.

To be honest, I'm now a purist when it comes to Cajun food, but all of my knowledge of it came from here.
My grandmother is from Basile (outside of Eunice) and she and her whole family use like a couple of tablespoons of roux in an entire gumbo.
My mom cooked dinner every day of my life, but jambalaya always came from a mix. Gumbo always came from a mix. Etouffee wasn't something I liked as a kid, but wouldn't be surprised if my parents use the Louisiana mix for that too. I know Mom for sure used tomatoes.

Its not a thought process.
Its the same principal as ordering a "Caesar Salad with ranch dressing."
If it doesn't have okra (or filet) it is a stew.
