Sous Vide vessel recs

I've been improvising using a cast iron pot on the stove. Finally getting an actual appliance from a friend.
What are you all using? Is covered important?

I just use a large stock pot
if you are going long, yes, but I just put foil around the top

A good seal is important for long cooks. I got rid of all of my plastic and I just use a tall skinny soup pot with my anova. For long cooks, I just put steam wrap on the top.

ALX, like other said, I use a big stock pot. If you want to get a dedicated vessel for SV, I'd get a cambro type pan like this:

I use the pot that came with my Instant Pot. I have the 8 quart one, so it's plenty big for everything I sous vide. I don't cover because I never do long cooks. I do wrap the pot in kitchen towels to give it a little bit of insulation.

For short sous vide I typically use a large heavy duty stock pot. But for very long cooks, I use the Frankencooler I made.
Was a quick and fun project that yields great results with no water loss for extended cooks.

I usually use a large stock pot for small quantities or an old ice chest for larger volumes.
For long cooks you can dump some ping pong balls in the water to prevent evaporation.

Just realized my entire Valentines meal will be sous vide with the exception of the asparagus and berry salad. Made creme brulee Wednesday, mashed potatoes last night, and going to cook the steaks tonight.

I like this idea. May try it. I’ve been using my magnalite roaster and I’ve used the crisper drawer from my fridge a few times. Storage is my main concern.

I like the insulation value of the ice chest. I use the Sous Vide Supreme and it is insulated also.
