Seasoning on Crawfish after Boiling

Got a buddy from Lafayette who says this is the real Cajun way. Don’t understand the point if you season them well while boiling. He says you steam them after the seasoning and it dissolves into the crawfish and nothing is dusty on the outside.

Need an OT ruling here.

I will loudly say WTF!!! If i see someone “dusting” their crawfish instead of seasoning prior to pulling the crawfish out.

On top of that a table needs to get flipped if i bite into a crawfish and taste fricking mustard.

The reason you season before the boil is so the flavor goes into the crawfish. Not after.

I know people do it, but I think it’s dumb. The seasoning is on the shell, so it gets really concentrated on your fingers and lips, but not so much in the juice of the crawfish, and not consistently in your mouth and on your tongue.

You know what else I don’t do? I don’t coat the outside of the shell of my hard boiled eggs with salt. I don’t put ketchup and mustard slathered on the outside of my hamburger bun. And I don’t dip my oyster shells in hot sauce before I shuck them.

Some people do it well. No worries.

They’re trying to get a better texture to the meat.

There is no point in seasoning the outside if you boil them. This is how you season shellfish when you steam it and for some reason, people don’t understand you can flavor shellfish with the water when you’re boiling and don’t need seasoning on the outside like you do when you steam.

I think you’re full of shite and just making stuff up for attention. If your buddy lives in Lafayette and boils this way, he probably wears skinny jeans, listens to Luke Bryan, and has NEVER asked his dad or grandpa how true Cajuns boil crawfish. Ain’t nobody in Laffy claiming “dusting” is the real Cajun way.

True that, my friend.

But a long time ago, I was "in the back" at a small restaurant in a small town near here, me and my dad visiting with the owner and his staff. Most all of them French-speaking.

There, I witnessed how the cooks seasoned the "spicey" orders different from the regular orders: They had a one gallon plastic bottle of Louisiana Hot Sauce, or similar brand, with the top cap replaced by a manual pump action device to dispense the hot sauce into plastic bins of crawfish ready to be served, then stirred around with a paddle.

Similar to dusting, but perhaps a little more acceptable due to the liquid nature of hot sauce giving the illusion that the spice is all boiled in to the meat.

Basile is just northwest of Lafayette and they farm a shite ton of crawfish…they steam crawfish with great results. If you do it right, the method works well.

I wouldn't go that far, but it is definitely not a way I'd cook, or season crawfish.

Doing it that way is an abomination in my book, but to each their own since I didn't pay for their crawfish.
