Use black pepper and Cavenders Greek seasoning instead of salt.

Try olive oil and a liberal amount of herbes de Provence.
Throw some carrots, celery, and a quartered onion in the pan with a cup of apple juice or white wine and a cup of water. Bake.

I use cavenders on just about everything (salt free) plus salt, pepper and lemon on chicken

Paula deen has a house seasoning that my wife uses with great success. It is some mix of just salt pepper and garlic powder. Despite its simplicity, it really does make outstanding baked chicken.
