Sacrilegious, but I was in a pinch and used a BOXED JAMBALAYA MIX.

Used Jambalaya Girl and have to say - it was pretty darn good. Way better than Zatarain's or Tony Chacheres (which I've tried in limited fashion in the past). My usual go to is Cajun Ninja's recipe on youtube but was limited on time and said why not. Anyone else use this stuff?

On the stovetop, a box mix is acceptable. If you’re trying to cook it in a jambalaya pot for 50+ people, it is not.

And Oakgrove is my favorite.

I would use sausage and chicken thighs

Should I use Oakgrove or recipe from scratch

Med - large pot on the stove

Depends on what you want. Sometimes I make macaroni and cheese from scratch. Other times, I use a box because it’s quick, cheap, and easy. Same with jambalaya.

I agree, its very good for what it is. People are gonna tell you Oak Grove is better, I disagree with that. Most probably haven't even tried it.

It’s hard to fathom craving jambalaya so bad you have to resort to a box version. The jambalaya making experience and the fact that it will cheaply feed a large volume of people far exceeds the actual product.

I have a box mix at the house. Can't remember the brand. I'll try it next week.

I grew up thinking it was crap. Mostly because all I ever had was benefit stuff made around here, and a lot of it had tomato in it. When Poche' posted his recipe with pics, I decided to try it as a Sunday afternoon cook. I am now a huge fan. Everyone who has had it loves t, and I get requests from family members to make for get togethers.

I don't know why but this made me think of Billy Madison. I disagree...Donkey Kong is a good game but Mortal Kombat is better.

I bought a box of that at Costco when there was a run on food at the start of the covid mess. This thread reminds me I've still got all of it and need to use it, good to know it's at least serviceable

I do a hybrid with Oak Grove packages.

Gotta add in your own trinity and a few other little bobs and weaves.

Crucify me, but Creole Jambalaya is tits.

Recipe

Apparently I can get to the link, but TD doesn't like it. Google John Folse

quote:

Creole Jambalaya
PREP TIME: 1 Hour
SERVES: 6-8

COMMENT:
The main difference between Cajun and Creole Jambalaya is the addition of tomato sauce and fresh tomatoes. Since tomatoes are American in origin, they did not play a role in international cuisine until the discovery of this country. It was the innovative Creoles who elected to give this paella-like dish a touch of class with the addition of vine-ripe Creole tomatoes.

INGREDIENTS:

¼ pound butter
1 lb andouille sausage, sliced
1 lb ham, diced
1½ cups onions, chopped
1½ cups celery, chopped
1 cup red bell pepper, diced
1½ tbsp garlic, chopped
3 cups Uncle Ben’s rice, raw
2 cups cooked chicken, diced
5 cups chicken stock
1 8-ounce can tomato sauce
1 Creole tomato, diced
1 bay leaf
½ tsp thyme
¼ tsp cumin
1 tbsp basil
salt and pepper to taste
2 lbs 50-count shrimp, peeled
1 cup sliced green onions
METHOD:
In a large Dutch oven, melt butter over medium-high heat. Add andouille and ham and continue to cook until lightly caramelized on the bottom of the pot, 10-15 minutes. Add onions, celery, bell pepper and garlic. Continue to sauté until vegetables are wilted, 3-5 minutes. Stir in rice and chicken, blending well into the vegetable mixture. Add chicken stock, tomato sauce, tomatoes and spices. Bring mixture to a rolling boil, reduce to simmer and cook on low heat, covered, for 30 minutes. Take care that heat is low enough to prevent scorching. Add shrimp and green onions, stirring well into the mixture, cover and cook 10 additional minutes or until shrimp are done. Serve as a main course or as a stuffing for chicken or seafood."

I agree. Oak Grove is best. SlapYaMama is closest to Oak Grove but not better. Jambalaya Girl was very disappointing.

Yes and I'm here to help you out. Stop over paying for her brand. It's good but $6 a box is absurd.

Use Louisiana Fish Fry's Box Jamby. It's $2 a box and LEGIT! It has a rich powdered roux in the package and you will not need to add any seasoning to it.
