I'm going back a few decades to a great sandwich shop in the 4200 block of Magazine St. called "Pete's. They were on the St. Charles side of the street right in the middle of the block. They were damn near next to the fire station that was across the street from my aunt's house.
We'd head over there a couple times a month for roast beef poboys but if it was Friday, we'd get fish, shrimp or soft-shell crabs due to the whole Catholic thing back then.
Last time I remember going there was in late 74 with a group of 10 guys and they made bank that day between the food and beer,

Chateau Orleans on Barataria in Marrero. Great onion rings too. Definitely worth the trip. Whatever you do don't go poboy hunting on Sundays. Most restaurants no longer get french bread delivered on Sunday morning. Those terrible sandwich shops like Sub-parway, Firedhouse and Jersey Yikes have really hurt the old greats.

If R&O’s is closed on a Monday, you next best bet for a roast beef poboy is Russell’s ShortStop

The Po Boy Shop in Decatur is one of our favorite places in Atlanta. My boss, a New Orleans native swears by it. They have a few tables upstairs, but downstairs is a big, nice bar. Go downstairs.
It's often easier to park around back and come in via the bar. You have to come in from another street to do that. The parking lot up top is often packed because Community Q is also in that strip, and it's good too.

Parenton's located aroud Central and Jeff highway has a pretty good roast beef and open on Mondays.

I'm just curious why would they all be closed Mondays? I'd think a Po Boy shop would have one of the busiest days on Mondays with everyone back to work and have a case of the Mondays in need for a good lunch?

Slowest day of the week (first day of the work week)
The least financially successful day and may cost restaurant owners more to open than to stay closed.
Restaurants that sell po-boys are not a chain, and therefore have less staff. Waitstaff and servers do not want to work on a Monday because they make NO money. You gotta at least have 1 day off, or proprietors will get burned out working 7 days a week.
Monday has traditionally been RB&R day. You can find hundreds of places for a plate lunch with fried chicken or fish and RB&R

Parasols is best in city. Hot. Garlic taste. Delish.
I have had many of them across city. This is a family tradition: finding best poboy and gumbo in city.
Lower garden. Common/3rd St. Do it.
