Not sure where you went but not a single joint named in this thread serves wet ribs. That's not a Memphis thing. Some places will serve them wet if you ask but any review you read about Memphis BBQ focuses on the fact that Memphis is know for dry rub.

Going to Memphis in two weeks, and this is going to be my first stop.
I like Rendezvous for what it was, but I'm more of a sauce guy so it wasn't my favorite.

Yep. Had a good time but the bbq sucked. Rendezvous is good but would be considered average in Tx. Probably wouldn't stay open in many Tx cities.

You have to go to Rendezvous once just to say you've been because it's an institution (very overrated), same as Dreamland in AL. I've been several times but never even remotely impressed. I've also been to ALL the other Memphis mecca's and NONE of them is worth a detour other than Gus' chicken which is awesome.
In summary, skip Memphis BBQ (once you get that Rendezvous virgin thing out of the way) and go to Gus' Chicken. Wait till you go to Austin if you want serious Q.

different styles entirely brah. You wouldn't go to Memphis and expect to find good brisket, for instance. For Memphis style BBQ I agree rendezous is overpraised but it's worth a visit for the experience and it's still good, imo.
Also, gus's is legit as has been said.

I've never been impressed with Memphis BBQ. Gus's, on the other hand, was life-changing.

It's really good, but i liked the place behind the Lorraine Motel better. Central BBQ.
Though the "Vous" style ribs at Rendezvous are different from anywhere else for sure.
