Reminder that the andouille challenge submission thread will open on Tuesday, March 2, and an update that submissions will be open an extra day, March 3rd. We’ll see how that goes.

If you haven’t entered before, this is a good one to start with!

I think it will certainly help if the dish is also creative, but man you really never know.

I thought that making your own bread for the sandwich competition would give people a leg up, and it didn't necessarily.

Yep no telling...that makes it fun. I didn't make the sausage to try to win, I made it because I just got a sausage stuffer. Imagine my excitement when you picked sausage and I could use it again after my hotdogs

I don't have one of those fancy sausage makers yet, so a trip to Laplace for me it is. I'm a fan of Jacob's.

Theirs is probably better than mine. I did watch some vids of them doing their work that's why I went with a 3/4" plate, that's what they used. Simple seasoning regimen as well. The trick is the smoke. I can maintain as low as 150 with the current setup so ill smoke it for as long as I can until it hits temp.

I think making something that other people can replicate should be a plus, as well, for voters. It doesn't take fancy equipment and know how to make good food.

I hand kneaded my dough. I hinted that a mixer would be a welcoming Christmas present which went over my wife’s head.
