I’m not making sausage to try to win, rather I’m challenging myself to make it and sharing the experience with y’all. I have been approaching these competitions to challenge myself in the kitchen and do some thing fun or something I haven’t done before. I have been wanting to make my own sausage so these recent picks have been a perfect outlet. With that said the dish my sausage is going into is a simple classic that wife requested and I like have leftovers in da freezer for nights I don’t feel like cooking.

Did you use hog or beef casing? I used beef and decided to peel it off when putting it into my dish.

I decided on something less complex as well because the other option was something I knew neither of us would want to eat. It was too heavy on the stomach.

Yep used beef rounds and did the same.

@darla yep I really enjoy cooking. I am the cook of the household for the 18yrs thus far. Love to cook hate to clean. Wife likes...well...prefers to clean and can’t really cook. So I like to zone out and listen to music at vulgar levels (if no one is home or sleeping) while I drink and cook.
