Red Beans and Rice Sides

Having a get together where someone is making red beans and rice. Someone else already claimed they’d make cornbread and drinks but I don’t want to show up empty handed. Any other side recommendations?

Cucumber tomato salad.

You can even do it with cherry tomatoes , the different colored ones, and toss in plenty of fresh herbs. Parsley, thyme, rosemary. Finish with olive oil.

Fried Chicken... Seriously someone buys fried chicken whent he family gets together since my grandmothers and mom have both passed. They use to pan fry it in cast iron skillets and it was amazing. Now I am hungry and I had crappy OLOL red beans for lunch.

Coleslaw. Maybe throw some jalapeños in it.

Or just one up their cornbread and do a Mexican cornbread.

Something acidic to balance out the savory and filling red beans and rice.

Coleslaw (cabbage and vinaigrette style based)

Usually a vinegar based slaw, or a broccoli slaw. Greens also, if I have fresh ones. Which I will this week!

Chopped onion salad. Diced onions, vinegar and lots of black pepper. You put the onions right into your beans and mix it up. Got this from my dad years ago and is a must with beans!
