The orange stuff in females is roe (eggs) the yellow in crabs & the green in lobsters (tomalley) is the organ.

That might be it looking at pics online. I thought it was mainly outside the crab under the flap.

From what I remember, roe forms in the body but moves to the apron after it is fertilized.

I only eat boiled crabs about 5-6 times a year max, so I'm not worried about any cholesterol or other issues associated with it.

I call those the straws. I've been known to suck the little legs for a bit of meat and juice.

I know some folks don't fool with the little straws or the meat at the end of those legs. I guess those folks in MD would REALLY think that's crazy, but I think it's nuts to throw out the claws and refer to them as "trash".

Who on earth could consider crab claw meat as “trash”? It has a subtly different flavor from body meat. I prefer claw meat for gumbo; it holds together a bit better, has more flavor, and doesn’t get stringy like body meat.

The gills, aka lungs: when you pop off the top shell, you will see a row of grayish white spongy structures, like long skinny tapering fingers, arranged in a row to the left and right of the central cavity. Most people strip them away first thing when peeling a crab so they don’t get mixed into the meat.

ETA some people call them dead mans fingers.

I had a discussion about it with some folks from MD. They couldn't believe we waste time on the claws and told me they consider the claws to be trash up there. My chin was on the ground, but theirs were too when I told them all the ways we use claws and claw meat.
