But no, I won't let my personal opinions about food mess with work. And at that point I won't be paying anyway. My employer would be footing the bill.

I try not to worry too much about how other people prefer their food and drinks. It has no affect on my enjoyment of either.

Best steak I've ever had at a restaurant. From Knife in Dallas. I ordered it "as rare as you can serve it"




I usually can't go much more done than that. Luckily my wife likes it that way too.

That's my favorite way but unfortunately I have to do at least medium rare. A perfectly chard ribeye cooked rare = toilet time for me.

I can't stand a ribeye cooked rare, especially if it's a fatty piece. The undercooked fat just disgusts me. I cook ribeyes to medium if they're real fatty.

While I generally don't care how people take their food, I think steak tends to be a sticking point for people because we flat out don't believe that people prefer the taste/texture of a well done steak over a medium steak. If you don't get into the texture of rare or medium rare, that I can buy. But if you're taking your steak over medium, you're just ruining a piece of meat because your ignorant arse thinks water mixed with a trace of myoglobin is blood and that thought makes you squeamish.

I was reverse searing steak for a group at the beach once and it got pretty late before we were actually going to sit down to eat, but everyone still wanted to eat out on the balcony. Several people asked for well done, but knowing the low light, I snuck them in right on the cooler end of medium-well. To a person, they said it was the juiciest steak they had ever eaten and wouldn't stop talking about it.

I firmly believe that if you blindfolded people who claim to prefer well done steak and did a taste test, a staggeringly small number of them would in fact prefer well done.

Yes but that's a whole different dehydrating process, not just overcooking the meat. It's a concentration of flavor, not just drying out.

It's actually been the the opposite in my experience. I think you are right on the Heinz part, but at a steakhouse I've observed it's the educated, organic buying, health conscious who would rather have their steak cooked medium well. Poors would never lose an opportunity to try to seem sophisticated. RARE! usually shouting it out.
