I've observed it's the educated, organic buying, health conscious who would rather have their steak cooked medium well

Buying organic is the opposite of being educated. It's called being hopelessly stupid.

Choose one.

Sounds like you get your steak burnt and are trying to make yourself sound better.

Killing the bacteria is my main concern. I do like a crisp on the outside, though, now that we are talking about me.

Not really necessary with steak. Tests have shown the only contamination comes from using utensils on cooked meat that were used to move raw meat. There was a study where they injected meat with e coli and the rare meat showed no signs of e coli when they sterilized the utensils after using them on the raw meat.

I've been eating beef carpaccio and tartare for years. I promise that a well handled rare steak won't hurt you.

Exactly. If you get good quality meat and know how to properly and safely store/prepare it, you have virtually no risk. You can even eat ground beef on the rarer side.

Beef is, by far, the safest meat to eat when it's not well done. Cows are not dirty animals, and are far less susceptible to the nasty shite that you could be consuming with pork or poultry if not cooked until "done." Poultry is the worst of them all.

Does not. Just make sure it was previously frozen so as to kill any warm water parasites.

Pork doesn't need to be well done, either.
