Okra recipe suggestions?

Got a bunch from a neighbor. Not interested in doing gumbo, Pickeling, or smothered okra.

Anyone have some suggestions? I got about 3 lbs or so.

Fried is the go to, just b/c the whole family eats it. But I roasted some that were freshly picked last week, and man it was good. Just salt, pepper, and garlic at 400 until tender. Delicious on its own.

Lightly coat it with olive oil and black pepper, place it on the grill at 550 and cook until it turns to ash. Use the ashes to fertilize other plants that taste better.

Seriously though, you can stuff them like jalapeños or roast them in the oven like asparagus. Try tossing them in a little bacon grease instead of olive oil before roasting.

I don’t care for okra in gumbo, but I enjoy it smothered, roasted and fried.

On a more serious note than the poster who said grill them to ash, I prefer to grill my okra till just done.


Get your grill hot first, then take the okra and sprinkle it with olive oil since the surface seems to absorb it fairly quick. Season with whatever you like----I prefer Slap Ya Mama, black pepper and some garlic powder.

Grill till done and I like to not let them cook until they split along the ribs. They will split if left on too long.

Steamed and hit with some fresh lemon juice, salt and pepper is another way I like to eat it.

Fried is good, but not so heart healthy, but I still eat it like that a few times each summer.

I like stew it with lamb. First brown the lamb in batches, sweat the onion and garlic separatly, add the meat and accumulated juices, canned tomato, 1/3 C white wine and seasonings (cumin, paprica). Simmer, covered for 1-1½ hours until the meat is tender. Add beef or chicken broth as needed to thin the sauce to your taste. Add the okra and simmer until they are cooked to the desired level of doneness. Bon appetit!

I found a good one a few weeks ago on refugeforum. Slice into 1/2” pieces and dip in ranch dressing then cover with all purpose flour. Drop in hot oil until golden brown then remove and sprinkle with garlic salt. Enjoy.

If you have more than you can eat for now, it freezes well. Clean, dry, and put in vac seal bags. You can blanch and all that, but it will be good without it for several months.

I like fried best. I slice into rounds, or slice some lengthwise like fries. Run a little egg white through it, hit with light corn meal. Fry in Fry Pappy until well done. Spread on baking rack and hit with salt.

I also steam it often. Less mess than frying. Steam about 20 minutes or until fork pierces easily and it no longer tastes green. Salt and eat.

nothing wrong with doing it like grandma used to.
little bacon grease in the cast iron skillet, little garlic powder, salt, pepper.
I was an adult before i ever had fried okra with breading.

My favorite okra is scrambled okra, or that's what I call it.

Fry the okra in a large skillet with oil and salt to get it cooked through a bit and break it up some.. when it's about half done, add flour and corn meal and get everything all crispy and a little burnt in places for that good taste. Cooking okra seems to take forever, but I can eat 4 lbs of it when it's cooked this way.

Not a fan of slimy okra, and I don't like whole okra. I like the crispy "mash".

I tried some okra snacks a few weeks ago and found them pretty good. Especially as a dipping utensil. I think they were just dehydrated until extremely crispy.

I tend to do roasts with the vegetables that I get from neighbors. Last week we roasted squash, tomatoes, and okra three times. Ate it over rice or just as a side. Have added eggplant to the mix in the past.

I love okra, though. My sister even boils it.

I’m in the roast camp. I like to coat them in olive oil, salt and pepper, and bake them in the oven. They come out like an okra potato chip. Typically I cut them in half too then bake.

My dad did it this way, sprinkling Jiffy mix on it and adding some diced jalapenos. It was quite good that way.

Ahhh, my jalapeno plant has 4 or 5 peppers on it right now, and I've been trying to figure out a good use.

Thanks for the idea. And I've never tried Jiffy mix on it. Wonder if that might make it too sweet tasting for me. May have to try it out.

Okra isn’t my favorite, but I did fresh okra tomatoes last year with a little bacon and it was really good
