Agreed.

TM has shifted their weighting system from the meats to what joints were doing with the meats. If a joint sprinkled lawn clippings on brisket and called it after a desert toad, it was a plus.

I'm no expert, but I think that for traditional Texas BBQ you kinda hit a wall where everything is really good in the meat department.

To me the things that differentiate (other than folks trying new flavors, etc.) are the sides.

We ate at Truth in Houston in 2023 and the meat was great, but the sides were amazing. Still have no clue what they do to their Brussel sprouts but best I've ever had. Amazing corn casserole. On and on and on.

Just to be clear, these are not my opinions… These are the opinions of the TD Lifestyle Correspondent.

I have never been to truth bbq… But I have been to the pit room a couple of times

Don't sleep on 2M Smokehouse in San Antonio. Fantastic Q, and they make a phenomenal beef rib.

I did not know that. Sure as hell could have fooled me with the number of anti-O&G articles I’ve read from that publication. During Covid summer, they published a cover story articles where you could hear the author’s giddiness about the “demise” of the oil industry through the pages.

I think Feges’s brisket is fantastic. Might be my favorite. The ribs can be hit and miss it seems, these days. And while I don’t judge BBQ spots based on the sides, they got rid of possibly my favorite or second favorite BBQ side dish, the collard greens smothered with brisket pieces.

Truth I’ve been to only twice, Houston location. Love the pork ribs, some of the best I’ve ever had. Brisket leaves me wanting, especially after the ribs.

its owned by one of Dan Duncans daughters. His 4 kids all became billionaires when he died. Think his death made them all top 10 wealthiest people in Texas

TM is a vanity project for a rich limo lib. It is the extreme variety of the trust fund TCU grad that lives in Austin and is effectively retired but owns an art studio to keep busy while her dad is an executive at an O&G company.

I live 3 minutes from Truth. Its brisket disappoints every single time. Dried out. I don’t get the hype. Pit Room and Pinkertons are much better (judging by brisket only).

I really want to try KG BBQ. He’s the Egyptian guy in Austin that has mixed in a lot of middle eastern flavors and sauces with traditional bbq. He’s doing a pomegranate based sauce and is smoking rack of lamb as well as lamb belly(bacon). He does brisket and ribs too. It looks pretty awesome.

It's every bit as good as you've heard/read. Pulled lamb shoulder as well as lamb chops. Kofta skewers. Try it all.

I agree. This list seems legit every year. They put a ton of work into coming up with the list.
