New Chef's Knife

Looking at getting a new Chef's Knife for my dad for Father's Day. Not trying to break the bank of anything looking for something $100 or less. Any got some suggestions.

Start him a nice set for $150 with a Wustoff. He will have it forever and you can add to his set each fathers day & Christmas.

The Victorinox are nice, I use them also, but the handles get ugly after a while.

I've been using a 10" dexter a lot recently. actually cut the end of my finger off the other night. 35 bucks or so. can easily hone the edge back. cheap enough to throw away and get a new one if you need to. I've got two and use them more than the average home cook.

Tojiro DP 8" chef's knife and 4" paring knife. All you need and at budget. Sharp as hell too.

I got a Global G2 for Christmas and I couldn't recommend it enough. I don't have big hands, so the slim handle really suits me.

Buy him a good knife. You can find him a good handmade knife on here for $100-$150. Way better than what you can buy out of a store. Check out the forum and you'll find a bunch of useful info

My Victorinox have 15 years on them and are still going strong. As mentioned, their handles will discolor, mine have turned a greyish black- but these are not display knives. These are hard working tools that get used every day. They have good balance and maintain an edge well.
I would recommend dropping a bit of coin on a high-end sharpener/honer. I have the Chef's Choice 15 Trizor XV EdgeSelect Electric Knife Sharpener. It can restore an edge to blades that have been badly used and also excels at regular honing.

Everybody is recommending victorinox and while I agree it's a great economical knife, it's not a "gift" knife. I highly recommend global in that price range for the average home cook.
