Here is recent Times Pic article/slideshow on chefs and their favorite knives. LINK
Some are HIGH dollar, but others are affordable. Donald Link likes a Henckels that goes for around $100, and he does okay.
I would be willing to spend some $$ on one if I ever found one that fit my hand and style better than the Victorinox.

I'm not debating if it's a good knife. I own one and used them for years.
It's an ugly knife though. It goes in the drawer.

Tojiro is a great entry level Japanese knife.
I have this and it's the sharpest damn thing I've ever used. Although you have to take care of it b/c it's carbon. The kurouchi finish takes care of the top part... The bottom you have to wipe down after use. It's an even better knife than the tojiro and its all hand made. I have the 8" version.
