that doesn't fall under you typical spaghetti, lasagna or alfredos. Something new. I am like italian, but tired of the same ol crap.

Homemade tortellini stuffed with sage and butternut squash purée.

Honestly, if you haven’t done your own homemade pasta before, that’s a great way to change up dishes you’ve made before.

I don't care what it falls under, spaghetti carbonara is one of my favorite things to make and eat, and I make a pretty damn good one.

It's a Greek dish, but Lamb Ragu

My process:

Sous vide and smoke the lamb, make a simple red sauce, slice/shred lamb and put in sauce, serve over orzo.


Other common Italian dishes that are easy and a little different are scallopini, piccata, parmigiana, marsala type dishes.

Tratorria Sostanza Butter Chicken

Bologna style bolognese (meat sauce not a red sauce) served with Pici pasta (Pici is made with semonlina and is a very thick pasta that takes about 22 minutes to cook

Homemade Tajarin pasta with butter sage sauce (so simple yet so delicious)

Four cheese herb infused homemade ravioli

Risotto. I don't find it too difficult, just requires patience and for you to sit over the pot while you slowly add the liquid to the rice

Chicken Vesuvio is another Italian dish that's a regular in my cooking lineup.

Not Italian , last week I made moussaka . Very time consuming and a pain in my butt . Tasted great though .

I make angel hair pasta with a special sauce I invented. The ingredients are ranch dressing, Thai fish sauce, butter, and oregano. It was just random crap I had in my apartment once years ago. You can dump in a can or two of tuna, too.
