Thinking of doing a Loaded Baked Potato supper tonight. Other than the regular (cheese, green onions, sour cream, bacon etc.) what else have y'all experienced with?

Skrimps, crawfish, peppers?

Anything good on top of rice should be good on top of a potato.

Whenever I make roast beef and gravy my wife likes to put leftovers on a baked potato the next day. You can also used leftover pulled pork

Any BBQ. Brisket, pulled pork.
My favorite is the baked potato is the loaded from Big Bob Gibson's with chicken and Alabama white sauce. Didn't think I would like this dish but Alabama poultry is the best I have had.

Try some fresh chopped Sweet Basil next time. Adds a whole other dimension of flavor.

Left over pulled pork in a baked Sweet potatoe with butter, sour cream, S&P, BBQ Sauce, Jalapenos and green onions is amazing.

Did this with leftover smoked pulled pork and was not disappointed.
