Prime Rib on Big Green Egg
Injected with a mixture of Beef Broth & Roasted Garlic Broth
Dry Brined in fridge for 24 hours with paste of Zatarain’s Creole Mustard, Garlic Puree, Coarse Kosher Salt & 16 mesh Black Pepper

Cooked to 120 degrees internal@ 225-250 degrees
Reverse seared on all sides at 550 degrees
Had Roasted Potatos, Roasted Broccoli and Spinach/Arugula salad

No plated pics. Beef tenderloin reverse seared on the BGE using cast iron grill grates. Served with roasted asparagus and twice baked potatoes.

Huge 6 egg omelet for 3.

Left over prime rib, baby bellas, bell peppers and Swiss cheese...



Egg a lil overdone but managed to flip it. 14" skillet

finely chopped baby bellas
garlic
lots of butter
shallots
a little red wine
salt, pepper, garlic pwdr, onion pwdr, thyme
Sauteed and cooked down for 20 minutes
