Cajun Claws in Abbeville is best and it's not close. The wait might be outrageous but it's worth it. Try to get there early for the first seating if you can or if not you can go to shucks or dupuis for oysters while you wait. After that I'd go Hawks and then Dwights or crawfish tyme (verot or ridge) if you don't want to drive to Abbeville

Ya, maybe that was a little harsh.
I never had sprinkled crawfish until I went over to Dwights and a couple places in alexandria.
Its just not right.
Dwights does have good food, just not crawfish.

At Dwight's you can order them mild, medium or hot, and the sprinkle is how they adjust the heat level per customer. I ordered the hot once and got through about three painful crawfish. I was crying and sweating and had to have them rinse them off, was the laughing stock of the table, and I like spicy food. With that said, I have a gang of friends who come in for Mardi Gras every year and Dwight's is one of their favorite places, so I end up there once a year. Very good crawfish, but bring your wallet.

I like them VERY spicy, but not that gritty crap sprinkled on the exterior of the shells. Dissolve it into the boil. Blows my mind that so many retail places in Acadiana don't do it the right way. Lazy bastards.

Medium is just right, but one night I thought I'd man-up and go Hot. Huge regret. Sinuses running everywhere and I was crying uncle throughout the meal. Never getting Hot again. But your mileage may vary.

I have no problem with sprinkling the top as long as the water is well seasoned as well. But you're right, if the only flavor you're getting is from the sprinkle and the tails themselves are bland that's crap.

That’s how I am. I’m good with dusting, though I prefer if it’s done in a manner where much of the outside seasoning also sortof “melts” on the shells.
However, the water must be seasoned. The worst thing is sucking the head or claw and getting complete blandness (Gator Cove). I find Crawfish Time on Verot does the dusting properly.

Crawfish Hole on Verot next to Earl’s. Drive-thru only. They don’t sprinkle on top. Grew up in Nola, and they are my favorite in Lafayette.

I have been to Dwights multiple times and am not a fan at all. My go to place is behind Lafayette high - The Crawfish Pot. They put seasoning on the outside, but i still get a good bit of juice in the head. I am from BR, but I am learning to be ok with the seasoning on the outside at the quick grab restaurants. I NEVER put it on crawfish I cook. Its fricking stupid. Just like liquid crab boil. Waste of money marketing ploy by the seasoning companies. Why add enough powder for a sack and then buy liquid to throw on top to make it taste like kerosene.
