Cheese, and goddamn pepper jack at that, mixed into boudin doesn't make boudin better.
I like Ronnies boudin balls as much as Billy's. I still stop at Billy's passing through, I'm a sucker for cracklins and a few boudin balls.

I think the boudin balls and rolls are great. Don't like Billy's cracklin.
I much prefer the style from Danny and Bonnie in Gretna, Toups, or Blue Oak's smoked cracklin.

Their boudin balls are great, just the ones that are stuffed with cheese are not for me.

Have not had these. What style is it? I like me some Billy's crackling...can founder on it, so I have to buy in small amounts. Ha

They got containers of precooked/parboiled whatever you call it. You order and they drop in the hot oil for the "2nd fry" of the cracklin process. Then they hit with a liquid seasoning, and then dry seasoning, shake it up, then serve to you in a paper bag. It's a true challenge not to eat the whole bag while it's sitting in your cupholder as you drive away.

Whenever I'm driving to BR from Dallas, I take a huge order from friends and coworkers for Billy's. I'm that a-hole in line buying two dozen boudin balls whenever I go. Everyone loves them.

I honestly don't know why people think that they aren't as good. I also believe that quebedeauxs PJBB is every bit (identical) as good as Billy's. Their boudin is very good and very close to Billy's as well.

Best boudin product out there. The ones in Opelousas are good as I just got donebut I do think the KS version is slightly better.

check out the boudin at rays grocery on hwy 182. I find that their boudin is much better than billys. they also have pepperjack balls that are good when fresh but not so good when they been sitting.

Had family there and spent 3-4 weeks there every summer.
great memories of the public pool and the Delta theater.
ETA: had my first Sonic experience there. and first exposure to cable tv.

Went to Billy's this morning and got a few pepper jack balls. Idk what it was but I think at the exact moment I was eating them, I decided I didn't really like them anymore and the cheese kinda grossed me out. Maybe I got a sloppy batch, but I think I'm gonna go with the regular balls from here on out and save the cheese for the wraps. I think the cheese oozing out is just a little too much and the balls don't really hold well with it. Just my .02. Still great shite

my wife / in-laws are from the Big O
Rays on 182 is her favorite boudin , and MaMa's fried chicken, and Soileau's fried shrimp & tartar sauce
