Jambalaya Sausage

Cooking a big jamb before thanksgiving and wanting to try a different sausage.

What is everyone using? Verons I assume is the favorite?

Anybody got any experience with the stuff from the mowata store?

My favorite is andouille.
More specific from Don's Hardware & Country Store in Reserve, La.

But any good local smoked sausage or andouille will work.

right.. May just stick with Jerry Lees. It's good sausage, but kinda oily for jamb. Gotta skim more than I like...

Verons used to be my go to...I recently tried French Settlement in a gumbo and may never go back to Verons. I could have literally ate a sausage only gumbo with French Settlement.

Rabideauxs smoked andouille.

But anything from Eunice, Ville PLatte ought to be very good. LA has an embarrassment of riches when it comes to food.

Veron's from Lutcher is very good, but the supermarket Veron's is a different animal. Might be my choice if I couldn't get Laplace andouille like Bailey's or one of the others.

Same, the supermarket stuff is great, the mass produced is okay. My wife likes Conecuh, I like it to. My Uncle sometimes cooks fresh sausage and I like that too.

What's the name of those folks that sell smoked sausage inside of the farmer's market in downtown Baton Rouge on Saturday? Cutrer's maybe? They have solid stuff. Use them all the time for beans, gumbo, etc.
Iverstine's on Perkins has really good stuff. I made a jambalaya with their andouille for the LSU-Bama game. They make good boudin with a lot of spice.

Their sausage is ok. But if in that area I would suggest going to colemans in iota, the superette in Eunice, tboys in mamou (or their satellite store in Eunice), or anywhere in Ville Platte.

My favorite is colemans. It's not overly smoked and great flavor. If you go there get some stuffed pork chops as well.

I'm from Ville Platte and it hurts my feelings to say this.

I had a real good smoked link from the new Bluebonnet Rouses. Def better than store bought Savoies or the other BR meat markets.

Don's smoked sausage is very good and the cheapest around if you buy 5 lb pack. WJ's Smokehouse and Benoit's are great in jambalaya, but pricey if making a big pot.
