Is there anything you should not cook with cast iron?

I'm just starting with cast iron cooking(got a Lodge 12qt Dutch Oven for Christmas). I've made pot roast twice, and baked a couple loaves of rustic bread. I was always told not to cook tomato sauce in aluminum pans because of some type of reaction. Is there anything I should NOT cook in cast iron? TIA.

Usually most people like to avoid citric & acidic items (tomatoes especially). The reason is that it eats into it, and depending on your own seasoning, you might get a metallic taste. Some folks have great seasoning and can do it with no harm. Also, if you don't clean well after, it will continue to eat it..

Nope, cook away!

Some people will say nothing acidic at first to season the pan/pot. I have never had this problem as I season my pans/pots frequently which is just good maintenance.

Idk if the pan wasn’t seasoned enough yet or what, but my clueless gf made scrambled eggs in one of mine and pretty much fricked it up. Took forever to clean.

I dont like doing eggs on cast iron.

A cheap nostick walmarks pan with a bit of butter is best for eggs imo

Okra and tomatoes because okra and tomatoes should never be cooked at all.

That wasn’t her fault, completely. You just have to use beaucoup oil or butter, and pan ,it’s be very well seasoned.

There are a few dishes where you don’t necessarily want the heat retention qualities of cast iron. Something like scrambled eggs is one. Although, I sort of like doing fried eggs, cooked in the just/cooked-bacon bacon grease in mine. It works good if you’re able to remove the eggs the minute they’re done to your liking.

this is it. I've had them stick in a pan that was still underseasoned. Once I got that shite well seasoned I don't have sticky eggs anymore.


Fry some bacon in it a few times and get that thing well seasoned.

my cast iron skillets are the only ones I have eggs won't stick to

my Dad taught me to cook Gumbo and said not to use Cast Iron when cooking seafood gumbo. I don't believe it had anything to do with the effect on the pot or the taste of the gumbo. but more on the appearance of the gumbo. Don't really know. So I just never have. I use Magnalite for Seafood and Cast Iron for everything else and no complaints.

my family usta say dont smother down okra in black iron it makes it turn dark. I aint sure and since the majority of our smothered okra goes in gumbos or stews who cares if it is dark its going in a dark gravy

Sure you can. Just make sure you have a good seasoning on your cast iron.

As others have said, do not cook things with tomato sauce. Once we made meat sauce in tomato gravy and let it simmer for an hour or so. It was horrible. Had an iron / metallic taste. Ruined.

I learned the hard way about letting the temperature come down after cooking the bacon before you put the eggs in. Took forever to clean that stuff. Now I know.

I cook my eggs every morning in the cast iron. It is as non stick as my old cancer filled teflon pans
