Ideas for leftover smoked pork shoulder

I was planning on smoking a pork shoulder Saturday for my parents when they come over. However, i also like cooking dinner for the week on Sundays. I struggle trying to find other uses for leftover smoked pork butt. Any ideas?
I tried making a jambalaya one time, but the pork seemed to lose some of its smoke and dry out being cooked twice. I know i could make sandwiches and stuff. Any stews or something i could throw the meat in that would keep the beef hydrated but also add some smokiness?
What about a white bean stew with pork shoulder and maybe add some greens?

Agree with tornado... and you can make a chili with it as well.
I really like cooking it down with a bunch of onions and bell peppers to make tacos.

Redneck egg rolls...pulled pork, coleslaw slaw, bbq sauce, and shredded pepper jack cheese in an egg roll wrapper . Fry till golden brown.

Enchiladas are easy and good with leftover pulled pork.

I cooked one up last weekend. Used the leftovers to make BBQ fries. Put some fries in air fryer than leftover pork on to with cheese and BBQ sauce on top of that. Warmed it all up in oven. It was fantastic.

I've added leftover pulled pork to my white beans (regular, not stew) and it worked great. Highly recommend it for adding smoky meaty flavor in beans.

Tacos and make this easy sauce. Pickle some onions and get some queso fresco.

3 Anaheim chile peppers, each about 6 inches long
1 ripe Hass avocado, coarsely chopped
¼ cup / 60 milliliters sour cream
¼ cup / 60 milliliters mayonnaise
2 tablespoons roughly chopped fresh dill
1 large garlic clove, coarsely chopped
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Blister the peppers on a grill or in a skillet. Put the chiles in a bowl, cover with plastic wrap, and let steam for 10 minutes. When cool enough to handle, remove and discard the stem ends, skin, and seeds. Drop the chiles into a food processor or blender. Add the remaining sauce ingredients and process to create a smooth dipping sauce. If the sauce seems too thick, add a little water. Spoon the sauce into a serving bowl.

Use it to fill homemade ravioli, if you like making fresh pasta.
Depending on how it is seasoned, use as the protein component for a veggie stir fry. Since you’re just reheating it, you can cut/shred into bite sized pieces and add directly to the wok with quick cooked stuff like snowpeas.
