I agree with RedHawk - but make salsa verde enchiladas

Slow cooked in a dark red gravy/tomato sauce. Add some wild mushrooms if desired. Serve with egg noodles or pasta rags. And chianti or a red zin.
It comes out better if you haven't already bbq sauced your meat.
I do this often with leftover smoked chicken and pork, and it is usually better than the original bbq meal.
