ideas for leftover grilled chicken

I have leftover grilled chicken breasts. Warmed up chicken breast are usually dry and chewy. Any ideas for using them for chicken salad, or anything else? TIA

We sometimes cut them up and make quesadillas. Add some cheese, cilantro, salsa, or whatever you like, put between tortillas (or one folded tortilla) and heat/griddle on a skillet until warmed through and the tortillas is crisp.

Chop the chicken up and add mayo, fresh or dried herbs, apples, raisins, cashews, and salt/pepper for a nice chicken salad.

If chicken breasts are dry, add more mayo. Will store for several days and its convenient as hell to serve because it doesn't need heating up.

Good smoky flavor? Even if not, I can get my kids to eat any meat when done as nachos. Not to exclude myself from that statement - melty cheese and some type of lubricant like bbq sauce or salsa depending on the meat just makes it good.

-Chicken salad
-Make a vegetarian type soup, cube them, and toss them in the soup just before serving just long enough to warm through
-Stick them in a ziploc and put them in a pot of hot water just to warm them and use for tacos, burritos, quesadillas, etc.
-Chop up and use in some kind of casserole. Enchiladas come to mind, but really, anything that you're just heating through a bunch of already cooked ingredients and not baking to cook would work
-Chop up and toss with some barbecue sauce (or really, any other kind of sauce that floats your boat) and make sandwiches
-Caesar or really any other kind of green salad
-Some kind of marinara and melted cheese over pasta or in a sandwich, like a chicken parmigiana, but without the breading and frying
-Chicken alfredo, florentine, etc., where you can cook the sauce and then just add the chicken at the end to warm through

Quesadillas
Copy Jason’s Deli Chicken Rachero wrap. Place diced chicken and cheese on tortilla and warm in oven about 3 minutes. Add pico and a ranch dressing. I make creamy jalapeño like they have at Chuy’s.

Wife has me thinking about burritos. Chicken, cheese, sour cream sauce on the inside, red sauce and cheese on the outside

Make an Alfredo sauce with 1 stick (1/2 cup) of butter, 1 1/2 cups of heavy cream and two cups of freshly grated Parmesan. Add leftover chicken (chopped) to 1 pound of cooked pasta of your choice and then mix in the Alfredo sauce.

I sometimes do a simple chicken pot pie with leftovers. Cube the chicken. Stir in a can of cream of mushroom and some mixed vegetables. Add milk til it’s almost soupy and season to your taste. Pour it into a lightly browned pie crust and top with crescent roll dough. Bake until the top is thoroughly browned and flaky.

I always make omelets the next morning. Green onion, spinach, gruyere cheese, and grilled chicken cubed makes a fine breakfast.

As a last resort I always vac it and freeze it for later use in gumbo/jambalaya/sauce piquant. Some other good suggestions above.
