Haven’t read all the responses yet but am I the only fatty that butters their bread & puts it under the broiler 1st?
Then add mayo, pickles & sometimes lettuce
Ketchup on the side for dipping

I like mayo but for some reason don’t like it on fried seafood poboys. Ketchup and hot sauce it is.

You're paying for it, so get it made how you like it. If you like lettuce, tomato, mayo and pickles, then by all means tell them that is how you want it.
I like the above for all my po-boys and will add hot sauce to some, especially seafood po-boys.
There is no "One Way" to have them fixed.

I mix up a cocktail sauce of ketchup, horseradish, lemon juice, salt, pepper and my homemade habanero hot sauce.

Ketchup on fried shrimp is DISGUSTING. Maybe hot sauce. Ketchup? No.

I agree but the phrase “dressed” should mean something. To me it means lettuce, tomato, mayo. If I ask for my shrimp poboy to come dressed and they put ketchup on it, it is going back.

Lettuce (shredded), Mayo, and tomato. Hot sauce on the table to add as much as you want.
No ketchup. Guy’s shrimp dressed has ketchup, I can’t stand that.

For me it's remoulade, lettuce, tomato, and pickle (but not too many) on a buttered, lightly toasted roll. The bread is very important.
