How much of a faux pas is it to put chicken in red beans and rice

When looking at the cookbook for red beans and rice recipes I dont see any mention of using chicken.

I know sausage is the go to protein but is chicken acceptable?

My charity is looking for a good (very large,600-700 servings) recipe. We were going to try to scale up a recipe and try it out. We would then give it to our local soup kitchen. We just want a good recipe...

We have a local chicken wholesaler who donates a lot of bulk chicken to us and it would be a lot less expensive to do so.

Also what if we used chicken and sausage? Is that a no-no?

Fried chicken goes well with red beans. Don’t see any reason why grilled or stewed chicken wouldn’t work.

I put leftover smoked chicken in mine all the time. I don't really care if it's a faux pas, I like it.

I would use chicken if was an at home regular weekly dinner. I wouldn't do it if it's a dinner party or for a large group. The expectation is to use sausage.

At home, a good home cook is using what you got to make a tasteful meal. Some rules are meant to be broken. A smoked chicken or braised chicken thighs sound delicious with red beans and rice.

Just call it "chicken and rice w/ red beans!"

We already have a couple of other recipes that use smoked chicken, that are really good so if smoking would be acceptable that would be easy for us. I was thinking of just doing it in the convection ovens, chopping and using our tilt skillet for making the RBR. But smoking is a good idea.

For the other recipes that call for smoked chicken we use pecan and a mix of boneless skinless breasts and thighs.

So it would be wrong to mix chicken and sausage? Really Im just trying to keep the costs down while providing a good meal.

I think using both would be way better than just chicken since beans in pretty much all cultures rely pretty heavily on a fat source for flavor.

Smoked chicken > just dicing and sautéing chicken if insistent on just chicken and no sausage, IMO. But if you are still using sausage, you don't necessarily need to smoke since a good sausage will be smoked.

Some people use ham bones and smoked ham as another fatty meat with smokey flavor in red beans. I don't know the pricing compared to chicken, but it's a possible option if the price is right.

K-Pauls used to serve butter beans at French quarter fest and they put chicken in there. Delicious!

Just grill the chicken and put it on the side just like you would a sausage link or pork chop.

I did this once because I wanted to make a good chicken stock just like I do with my Gumbo to use as the base for my beans as they cooked. Of course, I still had plenty of Sausage which is my favorite part of Red Beans, so that wasn't lost.

I actually liked it a lot.

I would think some smoked chicken thighs or something added to a traditional red beans & rice would be absolutely delicious. I'm not one that gets upset usually when people try variants of traditional dishes, as long as it is understood that they aren't trying to pass it off as the traditional dish. Fusion places are awesome, but you are aware that they are putting twists on classic dishes and recipes.

When it comes to an event like this that is for charity, if someone gets upset because you are making red beans & rice for ~600 people and you put chicken in it, they can get fricked

Go for it.

It would make my day if a homeless guy turned up his nose at red beans and rice because it had chicken in it. It would be hilarious and a much repeated story.

I made cajunates red bean recipe (from the site cookbook) in a 8qt cast iron pot last night as a test. It was really good.

Changes I made to it were using chicken stock instead of water. I used 1 pound of smoked chicken and 1 pound of sausage. Instead of fresh vegies I used some "C'est Tout Dried Trinity Mix" it is a freeze dried version that we already use for other recipes. It works really well. I figured if I was going to make a non-traditional RBR I could get away with this as well. It would take way too long to cut up that much trinity when we are on a fast schedule for food prep.

It turned out really well. Now we will do a 300 serving attempt for our soup kitchen. If it turns out well we will add it to our menu. Sometimes it takes a couple of attempts to get it right when scaling it up that much. Plus we wont be doing it in a cast iron pot and we will use our tilt skillet. Its stainless and sometimes requires adjustments to recipes to get them right.

I really appreciate the feedback. Please know if (when) LA gets another storm we will be headed yalls way.

Why would you care if it's someone's idea of a fox pass, you like it, you eat it. I mean it's not like you put potato salad in gumbo.

I usually just put sausage in mine, but smoked neck bones in a pot of red beans is delicious
