It’s a good sausage for jambalaya.
But I’m Rabideaux’s guy.

Manda sausage of any kind is awful unless you are in North Dakota. Way too many better options in LA that are not so greasy and the texture of a hot dog.

Manda sucks. Just my opinion.

I hate hot dog like sausage. When I see someone using hillshire farms I judge them hard.
Especially in Louisiana, I agree, way too many better options than that shite

Love Manda Green Onion in jambalayas. One of the best! Their crawfish boil sausage is some of the most uniquely tasting delicious processed sausage I’ve ever had. Manda cooked in a black iron pot and eaten with a piece of fresh white bread is my favorite.
Don’t listen to the haters. I’ve seen their processing plant and they grind Boston butt in a meat grinder. It is not emulsified hot dog meat. The fools who say that are ignorant.
They are a great local company. They outsell the other local brands and it’s not even close. It’s ok if you prefer another brand, but that doesn’t take away the fact that they are the most popular in Louisiana. I’ve seen Neilson ratings and they are right up there with the national chains. I don’t get why there’s so many haters on this board. Great company, great people, great sausage. Louisiana has a few great sausage companies. We are fortunate.

Mandas green onion and/or spicy are the best for jambalaya, gumbo, quesadillas, omlettes, poboys, you name it.....versatile as anything. Yes it is a tad bit on the greasy side but you can siphon off the grease per your liking when you sautee it.
ETA: works great in crawfish boils too

I don’t care for it, but if it works for you, go for it.

I love the green onion sausage. I find manda to be the best of the locally made varieties. It is consistently good. Richards and savoys are too hit and miss for me.

Ok we found the family member.
We’ve tried it a few times but Manda is way too much like hotdogs in taste and consistency.
