Has anyone made hog head cheese using a bone-in pork butt?
Also I seen a recipe somewhere using turkey neck meat? Comments please.

This is probably going to be absolutely no help, but some friends of ours in Cutoff made it with a bone-in pork butt and it was awesome.

Yes, you can make head cheese with a bone in butt. Why couldn’t you? Cook the meat anyway you want and take the bone out.

It’s called hogshead cheese. Don’t use turkey neck, use pork. Any pork meat will work.

All you need is: any pork, vegetables, seasoning, and fat to make it gel (typically pork skins boiled down).

Does a pork but have enough collagen? Or is it Gelatin?

I’ve always used pork skins with my pork meat. Is there a cut of meat y’all are using that gels without skins?

That's turkey cheese. Really good, basically tastes like solidified gumbo.

Seems like a picnic might be better option since they typically have all the skin still attached.

Hogs head cheese has little fat in it. It is the gelatin from the head or feet that holds it together. You can use butts and add the gelatin.

A friend of mine does Folse's recipe LINK and somehow adds more gelatin when he doesn't have the feet or head. I am not sure in what portions.

I do it all the time. I add a few pounds of split pig feet for the extra collagen, and also finish with gelatin as I prefer it very firm.

Fat doesn't make it gel. That's collagen protein.

You are correct. I misspoke saying fat, should have said skins.

I’ve always used pork skins. The pig feet sounds like a good idea if you cannot get skins. For anyone who likes to cook pork belly, cut the skin off the belly and save it for headcheese.

Op, my uncle makes cheese using butts. Waits until they go on sale and loads up. You can definitely do that.

Page 9 of the Recipe Book above:


(Edit to the recipe. The “First Cooking” should be a heavy simmer for around 2 hours , or until the meat falls off the bone. Then strain, cool, skim the fat. Follow the Procedure for the second cooking thereafter.)

Tony’s Seafood uses pork butt and in my opinion theirs is the GOAT.
