Ground beef 'chubs'

Anyone else with an aversion to those things? I've never bought one regardless of how much savings they might offer. Most are opaque; that's just deceptive. It's also possible that they harbor as high a quality as any other, and I'm simply as irrational here as elsewhere.
I have been given several elk by hunters cleaning out their lockers, but that's never bothered me, only the supermarket meats.

The 1 lb packs in most grocery stores started life as a chub.

If that is the case, then at least Id be able to inspect it for bugs and whatnot.

It's pretty bad. Almost everything in the center aisles is akin to poison.

What I don’t like about them is they’re very dense, so they’re not ideal for burgers. I think the beef being run through the grinder again when packaging helps. I made the mistake of just slicing hockey puck patties from a chub. Not good!

Most of the time a chuck roast is maybe a dollar more than ground beef.

Grab two, wave at the butcher, ask him to grind them for you.

I had read something once that eluded to the notion that those chubs are safer than meat ground one site in your store. The reason for the logic was the meat processing facilities that pack those chubs are held to higher standards or scrutinized more vs your local mom and pop. The meat is ground on site and never leaves the package again until its in your kitchen. Meat ground at a store was packaged once and pulled out in a environment that also had other proteins processed in them (and hopefully sanitized properly) to be ground and re packed.

With all that said I generally try to just grind my own meat. When I find something on sale I stock up

Most ground meat packaged in a grocery store comes out of a chub, and is broken down and packaged in smaller increments. This is something I have recently learned. At the local store I frequent I always got the 80/20 ground chuck in 1lb or 2lb packages. One day a few months ago they didn't have any, only a big chub of it. I told me meat dept. dude that I didn't do no chub meat, and asked if he could grind me up some 80/20 chuck. He laughed and informed me that I had been buying chub meat all along, that had been re-packaged. At this particular store the only fresh, in store ground beef is a 75/25 blend they package in 1lb increments and sell in the 5 for $25 packed deals.

it is similar to the whole untrimmed briskets in the cryovac; handled once then sealed. The opaque packaging may be a turnoff but the more ground meat is handled the more chance of contamination. The USDA doesn’t play around at the big meat processing plants. Chubs are safer and you can break them down at home

Does the grocery run it through a grinder again to...uhhh..fluff it back up?

The repackaged stuff isn't as dense.

Zuppardo's this week has 80/20 ground meat for $2.99 a lb - but you have to buy a 10 lb chub. Otherwise, I think it's over $4.50 a lb.

That's a fantastic sale price, so I went today and bought 2.

Just a heads up. Good through Tuesday.
