Game Day Brisket (with pics)

Salt and pepper rub.

Time to spritz. After 2 hours at 250 on the smoker.

Pulled after 4.5 hours. Wrap in foil, then back in the smoker until done. Turned out, that was about 2 more hours.

Let it rest an hour, then sliced it up. This one turned out pretty good. Cheers.

I'm calling BS on this pal, at 250? According to the brisket cooking geniuses on this board that is impossible. I couldn't count how many times I was told there was NO WAY that could work. See the linked thread. Unless you were cooking at 350, just no way.
