While factually true, most folks exceed the payload rating of a 3/4 ton truck when they tow. However it’s also true that the manufacturers de-rate the GVWR to keep them at or below 10,000 lbs.
So typically the truck is capable to tow what it’s towing, but potentially outside of the rated capacities which could be sticky in the event of a traffic accident.
I’ve scaled my truck and trailer and I’m clear by a narrow margin.
As for the question, test drive them all and see what you like best. All of these trucks have their quirks. I drive a 2019 6.7 powerstroke and I’ve enjoyed it.

I just don't see Bregman staying in Houston unless he has a strong desire to make it work (i.e. family) and I'm not sure how strong those ties are.

Yup, the ole wall plug does wonders. I still throw a couple ounces of hot shots winter fuel treatment when the temps dip into the mid-teens. Can’t hurt.
